Nanaimo Bar Recipe

Nanaimo Bars (Marsha)

Line a 9X9 square pan with aluminum foil, leaving enough extra to wrap around the top of the bars for storage. 

for bottom layer:

½ c butter

¼ c white sugar

1 egg

4 T cocoa

2 c graham wafer crumbs

1 c coconut

½ c nuts(optional)

In a microwaveable bowl, mix first 4 ingredients. Microwave on full power for a few minutes (check often and stir) until the mixture  resembles a custard (be sure to cook enough so the egg is no longer raw). Add in last 3 ingredients and press into a 9X9 pan. Freeze.

for middle layer:

¼ c butter

3 T milk

2T custard powder

About 1 ½ c icing sugar

Cream together and spread over bottom layer- this mixture should be quite thick but still spreadable- if it is too thin it goes soft too quickly once thawed. Freeze till quite firm.

for top layer:

Melt 4 squares semisweet chocolate and 1 tsp butter. Spread over layers. Freeze slightly and cut into squares before chocolate hardens completely.
